For me: The Montreal Bagel vs. The New York Bagel
The Montreal Bagel is the winner! I love them, but I've never been able to
make them at home because these are baked in brick fired ovens, and my oven
can't produce anything as worthy no matter what the tricks I use! There are
a couple different recipes for the dough itself, but the version I like is
made with sourdough starter. It's a very stiff dough that is also boiled in
alkalized water before being fired in the ovens.
