thanked everyone who sent me the Maggie Glezer braiding instructions.

Since I am giving her full credit (and I know she reads this site), I hope
she won't mind if I pass on a technique from her "Blessing of Bread" book.
She recommends a final rise to triple in bulk. It can be checked by talking
a rounded tablespoon of that dough and placing it in a 1/4 cup measure.
When it fills the measure, the shaped dough has tripled!
I am getting a much better rise and spring now that I can better guage the
rise!
