Fredericka: I (re-)posted a recipe I had previously gotten from this list for a lovely sour rye. You can find it here, in the list archives: http://www.bread-bakers.com/archives/digests/v104n009.txt It does use a starter that is made ahead of time and maintained between batches of bread, but if you want a well-flavored sour rye, it's worth it!
