Antoine, the manufacturers don't recommend it but we tested several breads
using the fresh yeast and found no significant difference ... they were just
slightly smaller. The only problem with the fresh yeast is that it's quite
a bit more expensive than the active dry bought in bulk and you do have to
watch the expiration date as it's usually only good for about a week.
