The bagel recipe in Greenstein's _Secrets of a Jewish Baker_ gives the kinds of bagels I think you're looking for. I just moved from the Detroit area, where you can still get the smaller, chewy bagels, to Mammoth Lakes, CA where the local bakery (there's only one!) makes bagels the size of Frisbees! In flavors I've never heard of before ... Chili Cheese, Pizza, etc! So I make my own, and they're just like the ones I used to get in Detroit. Evelyn Werthmann
