Barbara, the Hometown Creamery Revival offers classes from time to time
for both home cheesemakers and those interested in commercial artisan
cheesemaking. These are listed (along with other courses) on their webpage
at <http://metalab.unc.edu/creamery/courses.html>.
There is also an email list dedicated to making cheese in the artisan way
you might find interesting. Info about it can be found at the webpage
listed below...
