To Sue who asked about the Pullman pan: I've been using one for years, and yes, it does make perfect sandwich bread. I usually bake it for 30 to 35 min at 400 with the top on, then take the top off, lower the temp to 375 and bake for another 20-25 min. I do that with both a white and a whole wheat bread. If you use a scale (don't know how you'd do without!) the pan will take 2 lbs of white bread dough or 1 lb 14 oz. of whole wheat. Evie Werthmann
