Bread-Bakers v111.n027.1

On a recent trip I stopped at a Subway for lunch and observed that 
they offered sandwiches on rolls or flat bread.  Curious, I opted for 
the flat bread and was very pleasantly surprised at the better flavor 
and less volume of the flatbread sandwich.

Does anyone have a recipe that would mimic the Subway flat bread ?
