I use spelt to make bread in my bread machine because of dietary
reasons.  Spelt is an ancient grain which was used long ago just like
we use ap flour today.  You don't mention why you need wheatless flour
so I hope this helps.  Just reduce the amount of liquid used by 25%
when making your loaf.  Hope this helps.
